I was asked by a chef friend of mine to make a vegetable cleaver, she loved them and she wanted a really nice one.  So I made two as I often do with custom pieces and kept one and used it.  I was amazed by many aspects of the cleaver, the wide blade is perfect for placing vegeables into the pan or bowl, instead of diced onions falling all over the floor and countertop, they were neatly scooped into my fresh salsa.  The fine edge and wide blade mades it easy to rest the blade on the knuckles and get impossibly thin slices of potato, onion, garlic, or whatever you could need thin slices of.  Also the knife looks great and is a must for most serious cooks.

The Thorne is named after Larry Thorne, the longtime Malibu local farmer/artist/blacksmith/entreprenuer, who gave Iron Sand Malibu its first shot to be open to the public.  We have been selling and sharpening blades at his farm since the beginning, and I'm hoping that naming this knife after him lets him know the depths of the gratitude I feel for him and his wife Laurel.
